Soft Cinnamon Pretzels

This recipe is for use in the Thermomix, however can be easily modified if making by hand.

These are great for breakfast or an afternoon treat - get in quick though as they won't last long!!

Ingredients:

  • 1 cup milk

  • 1 packet instant yeast

  • 3 tablespoons packed brown sugar

  • 2 1/2 cups bakers flour

  • 2 tablespoons softened butter

  • 1 teaspoon fine salt

  • 1/4 cup baking soda

  • 2 1/2 cups warm water

  • 4 tablespoons melted butter

  • 1/2 cup caster sugar

  • 1 teaspoon cinnamon

  1. Heat milk for 2 minutes at 37 degrees for 2 minutes

  2. Add yeast and allow to sit for 2 minutes

  3. Add brown sugar and 1 cup of bakers flour - mix for 10 sec, speed 3

  4. Add butter and mix for 5 sec, speed 3

  5. Add remaining flour and salt and mix for 10 sec, speed 3

  6. Knead for 4 minutes

  7. Place in a large bowl and cover with a double layer of plastic wrap - allow to sit and rise for minimum of 30 minutes

  8. Preheat oven to 200 degrees and line baking trays with non-stick baking paper

  9. Divide dough into 12 pieces - roll and stretch each piece into a long rope and form each piece into a pretzel shape

  10. Mix baking soda and warm water into a shallow baking dish.

  11. Dip each pretzel into the soda bath and place on to a prepared baking tray

  12. Bake for 10 minutes or until lightly golden brown

  13. Brush cooked pretzels with melted butter and sprinkle with the combined cinnamon and sugar
